Cucumber sandwiches
No English party is complete without a sandwich platter. Likewise, no afternoon tea is complete without an array of finger sandwiches.
The cucumber sandwich is as iconic as they come – it has a little crunch, adds a small pop of colour to what is usually a beige display, and can taste surprisingly fresh.

We kept this extremely simple when we first uploaded this recipe to Mission Eurovision. Sometimes your party spread needs quick, easy fillers, and this cucumber sandwich is easy to put together while waiting for other dishes to bake.
There’s no reference recipe for this one. It’s just our sheer culinary brilliance at work here.
TIME: 5 mins / SERVES: 4 / DIFFICULTY: EASY
ingredients
- 1 sliced English cucumber
- 8 slices white bread
- Salted butter
METHOD
1.
Spread a liberal amount of butter onto the slices of bread.
2.
Carefully arrange the cucumber slices on top of one buttered side of bread – we favour a double layer. Delicately place another buttered side of bread over the cucumber slices.
3.
Trim off the crusts, then cut into fingers.
