The cheese and pineapple hedgehog was a crucial element of any party in the United Kingdom in the 80s and 90s. It’s time to bring it back. Sweet pineapple cubes and blocks of inoffensive cheese (most commmonly a medium-to-mature cheddar) stuck into a potato – what more is there to say?

This is a classic party dish and one that needs very few instructions. So few, in fact, that we didn’t even use any reference material when we created this recipe back in 2015. That’s right – we did this all from memory.

METHOD

1. CUBING
Cut the cheese and pineapple into equal sized cubes, roughly 2cm x 2cm, and place one of each onto the end of a cocktail stick.

2. PRESENTATION
Decorate your potato! We went for a jazzy Union Jack but you could opt for a classic tin foil wrap.

Stick the cocktail sticks with cheese and pineapple into the potato.
