Flammkuchen / Tarte Flambée
WE MADE THIS!
While you can find versions of this with a puff pastry base, we enjoy this unleavened bread that’s like an olive oil flatbread. Some recipes call for the onions and bacons/lardons to be fried before – here, we cook them on the dough for a more united flavour.

We used Marita’s recipe as our base – the dough is great, and next time we definitely want to use a pizza stone.
ingredients
- 2 white onions
- 100g thick bacon/lardons
- 60g crème fraîche
- 40g sour cream
- 1/2 tsp nutmeg
- Salt & pepper
- Chives to top
DOUGH
- 2 tbsp olive oil
- 125ml water
- 250g plain flour
- Pinch of salt
METHOD
1.
Preheat the oven to 250°C.

Finely slice the onions and place in a bowl of water. Microwave for 1 minute – this will prevent them burning later.

Whisk the crème fraîche, sour cream, nutmeg and some salt & pepper in a bowl. Put aside.

To make the dough, mix all ingredients with a hand or stand mixture until smooth. Roll out straight onto a piece of baking paper until really thin – almost translucent.
5.
Spread the cream mixture on top, leaving a small gap at the edges. Sprinkle the onion all over. Cut the bacon/lardons and place on top.
6.
Bake! This will need 12-15 minutes, depending on your oven and how crispy you like it.
7.
Sprinkle some chopped chives on top. Enjoy hot!
